The great thing about dumplings is you can customize the filling to your specific tastes. This recipe yields approximately 60 dumplings. (You can half it if you prefer to make less, however if you have a group of people together its fun to make together and send people home with!) The dumplings freeze well, and you can cook the dumplings from frozen using any of the 3 methods shown. #homemade #chineserecipe #dumplings Recipe ------------------------------------------------------------------ Ingredients: o 3 cups flour o 1 ¼ cups water o 1 tsp salt o 1 lb ground pork o 1 medium head of napa cabbage (1/2 a large head) o 20 garlic scapes (optional) o 2 bunches scallions (optional) o 4 cloves garlic o 1 tsbp minced ginger o 4 tbsp soy sauce o 2 tbsp sesame oil o 2 tsp pepper Dough: o Mix together flour and salt o Gradually add in water o Knead until soft o Let rest Filling: o Chop and heavily salt cabbage, set aside to rest o Chop all ingredients o Squeeze water out of cabbage, saving water o Combine ground pork, chopped vegetables and seasoning o Stir to create a paste gradually adding cabbage water Assembly: o Roll dough into small circles (roughly 2.5 inches across) o Fill with 1 tbsp of filling o Fold and let rest Cooking: o Choose one of the 3 cooking methods outlined and enjoy!
