Add a spring, cover and shake for 10 seconds. Add ice and shake to chill. Strain with a hawthorn strainer into chilled coupe or cocktail glass. In a clean shaker, combine half and half, sugar, salt and vanilla. Add a clean spring, dry shake. Add ice and shake to thoroughly chill. Strain over pumpkin into cocktail glass.
