Take few drops of the syrup in a dish and let it cool down completely. Check the consistency of the syrup between your 2 fingers. If it forms single thread, it means the syrup is ready. • Add yellow food color and kewara essence and mix well. • Adding food color is optional. You can skip it if you don’t want. you can use saffron essence in place of kewara essence. • Heat up the maida mixture on low heat and pour the sugar syrup in it. • Mix everything well together for about 7-8 minutes. • After mixing, if you see foam, then it means that the mixture is cooked well. • Turn the gas off and let the mixture cool down. • After cooling it for about 30 minutes, it comes together like soft dough, add cardamom powder and mix well. • Adding cardamom powder is optional. You can skip it if you don’t want. • Divide the mixture into 2 portions and transfer one it on a butter paper. • Roll it out into as thin sheet as possible and garnish with pista and almond slices. Roll once carefully so that the garnishing won’t fall off. • Cut the edges off and cut it into square pieces. • Cut the pieces along with the butter paper with the help of scissors. Mahim halwa is ready.
