Thank you for joining me as I use my Mom's treasured chow chow recipe to make my homemade relish. This is a great way to use a bumper crop of cucumbers. Feel free to make substitutions with what you have on hand. By substituting 4 cups of cabbage, you can make it into a chow chow texture. Ingredients: 4 cups chopped onions 8 cups chopped cucumbers 6 cups of chopped peppers (I didn't have 5 cups so I substituted more chopped cucumbers) 1/2 canning salt 6 cups sugar 2 cups water 4 cups cider vinegar 2 T mustard seed 1 T celery seed 1.5 tsp turmeric Wash all produce. Slice the produce. If you don't have the chopper, you can dice by hand or pulse is a food processor. Make sure not to over process since you want small chunks. Combine all the veggies in a large bowl and sprinkle 1/2 cup salt over it and allow it to sit a few hours to overnight to draw the water out of the veggies. Rinse the salt off and drain. Place the drained veggies in.a large pot and add the remaining ingredients in the pot and simmer it until the cucumbers are tender. It usually takes about 15-20 minutes. Wash your jars in hot water to sterilize them. Ladle the relish in the jars and wipe the rim off. Apply lids finger tight and place in a hot water bath for 15 minutes. Remove and let cool. Inspect each lid to make sure it sealed. Enjoy the garden year round with this way to preserve the bounty.
