There are sooo many different dishes you can make with zucchini and you might be surprised by how delicious and easy these ones are! ZUCCHINI PIZZA BOAT INGREDIENTS: 2 zucchini 1 cup pizza sauce 1 tablespoon olives 1⁄3 cup mushrooms 1 tablespoon vegan meat crumbles 1⁄4 cup breadcrumbs 1⁄2 cup shredded cheese (I used Miyokos mozzarella) 1 teaspoon oregano 1 teaspoon basil METHOD: Preheat your oven to 400F Wash and cut the zucchini's in half the long way Scoop out the inside bits of the zucchini halves and place on baking sheet Chop up mushrooms and olives and add to pizza sauce with meat crumbles (can also add the scooped out zucchini to the mixture) Fill zucchini with pizza sauce mixture Top with breadcrumbs, shredded cheese, & herbs Bake for 30 minutes - until you can put a fork through the zucchini and the tops are crisp ZUCCHINI BROWNIES 1 ½ cup grated zucchini 1 cup oat flour ½ cup cocoa powder 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon ground coffee ¼ cup chocolate chips ½ cup almond milk ½ cup almond butter ¼ cup maple syrup METHOD: Preheat oven to 400F Combine all dry ingredients and wet ingredients in two separate bowls Pour mixed wet ingredients into the dry bowl and combine fully Pour brownie batter into a baking pan (lined with parchment paper) Top with more chocolate chips/chunks Bake for 30 minutes and check if they’re done by using a toothpick or knife to pierce the brownies - if it comes out clean, they are ready! Let cool & cut ROASTED ZUCCHINI PESTO PASTA INGREDIENTS: 1 box of pasta 2-3 small zucchini 2 cups spinach 1⁄4 cup fresh mint 1⁄2 cup fresh basil 1⁄2 cup cashews 1 teaspoon salt 1⁄4 cup unsweetened nut milk 1 lemon (juice) 2 tablespoons feta cheese (I use Follow Your Heart) METHOD: Preheat oven to 400F Cook pasta according to box Cut zucchini in half and bake at 400 for 20 minutes Once zucchini is cooked, add all sauce ingredients to blender & blend until smooth Coat the pasta in the sauce Add feta cheese and fresh basil on top to garnish Optional - add a drizzle of chili oil on top ♡ Say a prayer of gratitude, serve with love, and eat with joy!
