Hey guys! Today I’m gonna show you how to make Real Akbar Joojeh — the authentic Iranian way! First, we take small chickens and cut them in half right down the middle. Give them a good wash. Now grab a big bowl, fill it with water, and add 2 tablespoons of salt. We’re going to let the chicken sit in this salty water for a bit, like a quick brine. Meanwhile, pour a lot of oil into a frying pan — don’t be shy with it! Take the chickens out of the saltwater, pat them dry with paper towels, and place them gently into the cold oil. Now, for the flavor magic: In a small bowl, mix up some garlic powder, onion powder, coriander powder, cumin powder, and a bit of saffron (dissolved in warm water). Pour this beautiful mix all over the chickens and rub it in really well so it soaks into the meat. Next, we add 5 garlic cloves, 1 onion (just cut in half or quarters), and about 2 big tablespoons of butter (or use local ghee if you have it — I used regular butter here). Turn the heat to medium and let those chickens cook slowly. Keep checking them, flip them around, and make sure they don’t burn. They’ll slowly cook in that oil and get super juicy and flavorful.
