Gluten Free/Dairy Free Oatmeal Scones • 【Gluten Free】The best oatmeal scones/Dairy... ************ ◇Ingredients (2 Baguette) Dry Ingredients - 170g superfine rice flour 80g GF ground rolled oats (I used Bob’s Red Mill Gluten Free Rolled Oats) 55g Potato starch 25g tapioca starch 5g psyllium husk 1 tsp Xanthan Gum 3g salt 5g raw caster sugar 5g dried yeast Wet Ingredients - 250g lukewarm water 1 egg white 20g extra virgin olive oil 60g lactose free cream cheese (Philadelphia) 2 tsp water ( I adjusted the consistent of the batter) ◇Preparations Soften cream cheese Lukewarm water Sift potato starch When preheating the oven, preheat a baking tray and an empty tray for holding water ◇Instructions 1. Use a stand mixer fitted with a paddle. Place all the dry ingredients in a mixing bowl. Combine well on low speed. 2. Keep mixing, add all the wet ingredients. Beat it on medium speed for 5 minutes. Scrape the batter from the bottom and side of the bowl and combine halfway through beating. 3. Spray water and cover with wrap. Leave it until double in size (40~60 minutes). 4. Spray water and cover again. Keep it in the fridge overnight. It's easier to handle the batter as it becomes firm up in the fridge. 5. Start preheating the oven to 230℃ with a baking tray and an empty tray for holding water. 6. As this batter is sticky, dust the workbench with rice flour as well as the batter. Cut in half as I make 2 baguettes. Gently roll and make a baguette shape for 2. Smooth the surface. Spray water and cover with wrap. Leave for 15 minutes. 7. Dip the tip of the knife in oil and slash. As the cut closes and sticks easily, support to open it with your other hand. Place the baguettes on the preheated baking tray. As soon as you put it in the oven, spray water on the baguette and pour a cup of hot water into the bottom empty tray. Close the oven door quickly. Bake at 230℃ for 25 minutes. Rotate the tray halfway through baking. 8. Let them cool down for around 2 hours. Bon appétit! ※The result of baking may be changed depending on each oven at home.
