Welcome to Osama Jalali’s Food World ❤️ Today we are making Mutton Shami Kebab, one of the most loved traditional kebabs in South Asian cuisine. These kebabs are soft, juicy and packed with flavour, made with mutton mince, chana dal and the perfectly balanced Hamdard Khaalis Shami Kebab Masala. This masala helps achieve authentic taste and aroma without the need to measure multiple whole spices. Crispy on the outside and melt-in-mouth from the inside, these kebabs are perfect for snacks, daawat platters, Ramadan iftar or sandwiches. 🥣 Ingredients • Mutton mince – 1 kg • Soaked chana dal – 200 grams • Ginger garlic paste – 2 tbsp • Hamdard Khaalis Shami Kebab Masala – 100 grams • Peeled onion – 1 • Water – 250 ml For Mixing • Chopped green chillies – 1 tbsp • Chopped fresh coriander – 1 tbsp • Chopped onions – 4 tbsp • Raw egg – 1 👨🍳 Method In a pressure cooker add mutton mince, soaked chana dal, ginger garlic paste, peeled onion and Hamdard Khaalis Shami Kebab Masala. Add water and pressure cook for 4–5 whistles until the mixture is fully cooked. Open the lid once pressure releases. If any moisture remains, cook further until the mixture becomes dry. Spread the mixture on a flat tray and allow it to cool. Once cooled, grind the mixture in a mixer grinder. Add chopped onions, green chillies, fresh coriander and one raw egg. Mix thoroughly. Shape into kebab patties. Heat oil in a pan and fry the kebabs until golden and crisp on both sides.
