🤍Ingredients: 250 ml warm milk (1.25 cups) 20 g fresh yeast 1 teaspoon baking powder (makes it softer for longer, so be sure to add it) 65 g butter (room temperature) 50 g sugar (3.5 heaping tablespoons) 1 vanilla sugar 1 egg Approximately 470-480 g flour (approximately 4 cups) Filling: 75 g sugar 1.5 tablespoons cinnamon 100 g butter (soft, room temperature) Frosting: 125 g full-fat fresh cheese (Frischkäse Doppelrahmstufe) 30 g butter (soft) 60 g powdered sugar Heat the milk with the butter (warm). Transfer it to a deep bowl with the remaining ingredients and knead until you have a soft, smooth dough. Cover and let it rise for 40 minutes. Meanwhile, combine the butter, sugar, and cinnamon. Turn the dough out onto a lightly floured surface and roll it into a rectangle. Spread cinnamon butter on top and roll it up. Slice the dough approximately 2-2.5 inches thick. The thickness depends on the size of your baking pan. You can cut it into 9-12 pieces. For a more precise cut, use dental floss or a thin piece of string instead of a knife. Line the pan with baking paper and grease the edges. Place the cinnamon rolls in the pan, leaving a slight gap between them. ! Let them rise again, covered, for 40 minutes (this is very important). Bake in a preheated oven at 180°C (350°F) for about 25 minutes, depending on the size. For the frosting, beat the soft butter, fresh cream cheese, and powdered sugar until smooth.
