In this Vintage Cookbooks and Crafts video, I will be making CORN CHOWDER and CHEESE STICKS, from this 1967 cookbook titled: COOKING WITH STYLE “Easy, Elegant Recipes and Menus for Exciting Entertaining” by Charlotte Adams. My husband said the Cheese Sticks go well with the Chowder; saying, quote: “They complement each other.” Recipes ~ CHEESE STICKS (pg. 2) 1 recipe Rich Pastry (pg. 15) 1 cup grated Parmesan Cheese Salt Cayenne Roll out chilled pastry to about ¼-inch thickness. Sprinkle half with cheese, salt, and cayenne. Fold over and roll out again. Continue sparkling, folding, and rolling until cheese is used up. Cut into strips about 1/2 inch wide and 5 inches long. Twist strips to give fluted appearance. Place on cookie sheets and bake in 400°F oven until delicately brown (6-8 minutes). Makes about 4 dozen sticks. ❦ RICH PASTRY (pg. 15) ½ cup Butter ½ cup Lard 2 cups Flour 1 teaspoon Salt Ice Water (about ¼ cup) Cut Butter and lard into the flour with a pastry blender until small, even particles are formed. Add salt and mix. Add only enough ice water to make the particles stick together. Form into a ball. Wrap in waxed paper or plastic wrap and chill in the refrigerator at least an hour. Roll out as desired. ❦ CORN CHOWDER (pg. 20) 8 slices Bacon 2 large Onions, chopped 4 medium Potatoes, diced 2 cups Water 3 cups fresh, canned, or frozen Corn kernels 2 cups Milk 1 cup Light Cream (I used Half & Half as our store doesn’t carry light cream) Salt, Pepper, and Paprika to taste Fry Bacon until crisp. Drain on absorbent paper. Sauté onions in bacon fat until golden. Add potatoes and water. Cook until potatoes are tender (15-20 minutes). Add corn, milk, and cream and cook 10 minutes longer. Season to taste. Crumble bacon and sprinkle a little over each serving. Serves 8. ❦ I hope you enjoyed my video and this is delicious recipe.
