As time progressed, Nihari migrated from the royal kitchens to the plates of labourers, who were fed this protein-heavy dish in place of their daily wages, as it was known to keep one sustained for the better part of the day. It consists of slow-cooked meat, mainly a shank cut of beef, lamb and mutton, or goat meat, as well as chicken and bone marrow. It is flavoured with long pepper (pippali), a relative of black pepper. In Pakistan and Bangladesh, nihari is often served and consumed with naan. Nali Nihari recipe in English Masala preparation: Black Cumin seeds 1 tsp Green cardamom 5-6 Cloves 5-6 Black pepper 1 tsp Black cardamom 3 Star anise 2 Mace 1 piece Nutmeg half piece Fennel seeds 2 tbs Cumin seeds 1 tbs Long pepper 2-3 Coriander seeds 2 tbs Cinnamon sticks 2 pieces Carom seeds ½ tsp Add all above spices in a pan and dry roast at low to medium heat for 5 minutes. Let them cool, add in a grinder and make it's powder. Masala Gravy preparation: Wheat flour 3 tbs Gram flour 3 tbs Salt 1 tsp or to taste Turmeric powder 1 tsp Ginger powder 1 tsp Garlic powder 1 tsp Water 1 cup In a bowl add both flours, prepared Nihari Masala powder, salt, turmeric, garlic ginger powder and one cup of water. Mix it well and set aside. To make Tari add half cup oil in a pan 1 tsp of red chili powder, heat for a few seconds. Dish out and set aside. Prepare Beef Nihari: Beef bong (Shank) 1.5 Kgs Beef bones 500g Cooking oil ½ Cup Green chillies 5-6 Water 2 litre or as required Take a large pot, add oil as oil heats up and add meat and bones. Cook until it gets rich in brown. Now add prepared masala gravy and cook until it dries. Add water and bring it to boil, add green chilies and cover, cook for one & half hour or till meat tenderize. Cover again and cook at low flame for 10 minutes. Turn off the flame, cover & let it rest for 10 minutes. Dish out in a serving bowl, Poure prepared tarri, garnish with Fresh chopped coriander, Ginger (julienne) and sliced Green chilli. Nali Nihari recipe in English: Masala ki tayari Kala zeera 1 tsp Hari elaichi 5-6 Laung 5-6 Sabut kali mirch 1 tsp Badi elaichi 2 Badiyan ka phool 2 Javitri 1 piece Jaifil half inch piece Saunf 2 tbs Zeera 1 tbs Pippali 3-4 Sabut dhania 2 tbs Darchini 2 tukray Ajwain ½ tsp Tamam masalon ko 1 pan me daal kar halki anch par 5 minutes k liay bhoon lain. Thanda honay par grinder me daal ka powder bana lain. Masala Gravy ki tayari: Atta 3 tbs Baisan 3 tbs Namak 1 tsp or to taste Haldi powder 1 tsp Adrak power 1 tsp Lehsan powder 1 tsp Pani 1 cup Bowl me atta, basin, tayar kia nihari masala powder, Namak, Haldi, adrak lehsan powder or Pani Mila k ashi tarah mix kar lain. Or 1 taraf Rakh dain. Taari bananay k liay pan me adha cup oil or 1 chamach Laal mirchon daal kar halki anch par Chand seconds paka lain. Or bowl me Nikal dain. Beef Nali Nihari ki tayari : Cooking oil ½ Cup Beef bong (Pindli) 1.5Kgs Beef Nalian 500g Sabaz mirchain 5-6 Water 2 litre or as required 1 bardi karahi me oil daal kar garam kar lain or gosht or Nalian dono daal kar pakain. Gosht asha brown ho jay tu tayar masala gravy daal kar pakain. Jab Pani khushk ho jay tu ashi tarah bhoon lain. Ab Pani daal kar ubal anay par hari mirchain daal dain or dhak kar halki darmiani anch par 1.5 ghanta pakanay dain. Gosht ashi tarah gal jay tu dhak kar 10 minutes k liay dam day dain.
