Achar Preparation: -Cut raw mangoes into pieces,remove pits & place them in a bowl. -Add salt,turmeric powder & mix well. -Let it rest overnight (minimum 8 hours),keri (raw mango) will release all its moisture then let it in its moisture for more 1-2 days & well shake twice a day. Mangoes will be lit ripe and change its colors. Now strain extra moisture. -In raw mangoes Add prepared achar masala, add vinegar, add sugar & mix well. Add salt & mix well. Now transfer all pickles into a dry clean jar. -Add mustard oil & mix well. -Keep in sunlight for 2-3 hours daily for 8-10 days. -Keep shaking the jar occasionally in between. -Can be stored in an airtight jar for up to 1 year. Achar Preparation: -Keri ko pieces mein cut ker ka gutlian nikal lein aur large bowl mein dal dein. -Namak aur haldi powder dal ker ache tarhan mix karein. Overnight kliya rest dein (minimum 8 hours),keri Pani shoredain gey ab aamo ko is Pani me mazeed 1 2 din kliya shore dain or har roze 2 se 3baar ashi tarah hilain. -Keri apnay Pani me thori naram ho jay gi or rang b badal jay ga. -Tayyar achar masala aur namak dal ker ache tarhan mix ker lein. -Keri mein sirka or Cheeni dal ker ache tarhan mix karein. -Achar ko dry & clean jar mein dal dein. -Sarson ka tel dal ker ache tarhan mix karein. -Ab ahaar 8-10 din kliya rozana 2-3 ghantay dhoop lagwain. -1 saal kliya airtight jar mein store ker saktay han.
