Eggs Benedict in 5 minutes? You think I'm crazy but seriously it is that quick! This recipe is so easy to do, and is perfect for those weekend brunch dates or if you just fancy treating yourself. For this eggs benedict recipe you will need: 2 Eggs 2 English Muffins Smoked Ham White Wine Vinegar (add a tsp to the boiling water) ½ Shallot 2 Egg Yolk 2 Tsp Water 2 Tsp Lemon Juice 200g Unsalted Butter Salt & Pepper to taste Chives To make the shallots what you need to do is: Cut half a banana shallot and dice it nice and fine. Reduce it gently in a pan with about 2 tbsp of white wine vinegar. Put it on a LOW heat, you are looking to almost poach the shallot until all of the liquid evaporates, don't let them fry! Once it has evaporated take the shallows out and then they are ready to use!
