We harvested and tasted the new shoots of a tree called "Chanchin". Chanchin is a deciduous tree of the Meliaceae family native to China. The bright pink shoots that appear in early spring can be eaten. This time we tried making them into tempura. When harvested, they had a sesame scent. When we fried them, the unique taste and the sesame scent that wafted through our nose made them taste like wild vegetables that we've never eaten in Japan. I think it's a taste that some people will love and others won't. It also seems to be suitable for egg dishes and stir-fries.
