Colin SUBSCRIBE & GET NOTIFICATIONS: http://bit.ly/COLINary INSTAGRAM: / colinary_ Brownie Cheesecake Bars Makes 16 bars Ingredients Brownie • 1 stick unsalted butter, melted (113 g) • 1 cup granulated white sugar (200 g) • 2 large eggs • ½ tsp vanilla extract • ⅓ cup unsweetened cocoa powder (33 g) • ½ cup all-purpose flour (60 g) • ¼ tsp baking powder • ¼ tsp salt Cheesecake • 16 oz. cream cheese, softened (453 g) • ⅓ cup sugar (67 g) • ½ tsp vanilla • 2 large eggs Chocolate Ganache Glaze • ¼ cup heavy cream (60 mL) • ½ cup dark chocolate (50 g) Preparation Brownie 1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper. 2. In a large bowl, melt butter with a microwave. Whisk in sugar until well combined. Mix in the eggs and vanilla extract. 3. In a separate bowl, combine cocoa powder, flour, baking powder, and salt. Sift in the flour mixture and fold it into the wet ingredients until combined. 4. Evenly spread the batter in the baking pan and bake for 25 minutes or until the top is shiny and the batter is set. Let the brownie cool on a wire rack. Cheesecake 1. Let the temperature of the oven drop and preheat to 325°F (163°C). 2. Beat cream cheese, sugar, and vanilla.. Add eggs and beat the mixture just until well combined. 3. Pour over the brownie and bake for 40 minutes or until the cheesecake is almost and cooked through. 4. Cool on a wire rack and refrigerate for 2 hours before topping with chocolate. Cool for another hour if necessary before cutting. Glaze 1. Place chocolate and heavy cream in a small bowl and microwave at 30-second intervals, stirring until well-combined. Let it sit at room temperature until it slightly thickens. 2. Transfer to a small ziplock or piping bag and snip a very small hole. Drizzle ganache over the cheesecake layer.
