Hand-Cut Braised Pork Rice Ingredients: 1200g pork belly 300g pigskin 250g shallots, sliced Seasonings: 250g soy sauce 80g thick soy sauce 200g cooking rice wine 60g rock sugar 1/2 tsp. Chinese five spices 1/2 tsp. cinnamon powder 1/2 tsp. white pepper powder 900ml water Instructions: Blanch the pork belly in boiling water until cooked, then cut it into thin strips. Place the pigskin in boiling water and boil for 3 minutes, then remove and let it cool. Cut the pigskin into small cubes. Heat some oil in a pot, add the sliced shallots, and stir-fry until they turn golden brown and fragrant, then remove and drain the oil. Use the remaining oil in the pot to stir-fry the pork belly until it turns white, then add the cubed pigskin. Add the powdered seasonings and stir-fry until fragrant. Add rock sugar, soy sauce, thick soy sauce, and cooking rice wine, stir-fry until fragrant, and then simmer for 3 minutes. Add water, bring it to a boil, cover the pot, reduce the heat to low, and simmer for 40 minutes. Open the lid, add the oil and shallot mixture from step 4, and continue to simmer for another 20 minutes.
