Combine everything together with the flour, add more if necessary. Wet your hands and roll into even-sized meatballs, then set in the fridge for an hour. Fry the red curry paste in a little coconut oil, then add in the coconut milk. After an hour, heat a little coconut oil in a separate pan and add in the meatballs. Coat with more oil and turn gently and regularly to brown on all sides. Sweeten the broth with coconut sugar, add in the chickpeas and fresh coriander. Place the tofu meatballs in the pan to keep warm while you cook the rice. Serve the broth over the rice with the meatballs on top. Garnish with fresh lime zest, lime juice and more coriander.
