Hello and Happy Fall my Friends, welcome to my Southern Kitchen and the sixth episode of my Fall Baking Series of 2024!! Today we are celebrating a big, major milestone here on Ellen’s Homemade Delights, we have reached 40,000 Subscribers; I can’t thank y’all enough my friends and I am grateful as always!! To celebrate, I’ve got a great Cake recipe to share! Are y’all a fan of Honey Buns and Sweet Potatoes? Have I got a treat for y’all, we are combining the two together and make a Sweet Potato Honey Bun Cake! Moist, decedent, and loaded with fresh Sweet Potatoes and Spices topped with a Sweet Vanilla Honey Glaze; a perfect treat for the Fall Season also a great dessert to serve on Thanksgiving! Everyone will love and enjoy this! Cake Batter 1 (15.25 ounce) box yellow cake mix 1/2 cup all-purpose flour, spooned and leveled 1/2 cup white sugar 1/4 teaspoon table salt (if using unsalted butter) 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/2 cup (1 stick, 8 tablespoons) unsalted or salted butter, melted and cooled 1/4 cup full-fat sour cream, room temperature 1/4 cup buttermilk, room temperature 4 extra-large eggs, room temperature 1 teaspoon pure vanilla extract 1 large sweet potato Brown Sugar Filling 1 cup packed light brown sugar 1 1/4 teaspoons ground cinnamon 1/2 cup toasted chopped pecans or walnuts Vanilla Honey Glaze 2 cups powdered sugar 2 tablespoons unsalted or salted butter, melted and cooled 1 teaspoon honey 1 teaspoon pure vanilla extract 3 to 4 tablespoons evaporated milk Pinch table salt Ellen’s Magic: You can add a few drops of orange food coloring to the batter for a little more orange color. Ellen’s Homemade Buttermilk recipe: • Buttermilk Recipe | How To Make Buttermilk... Preheat the oven to 400 Degrees (for the Sweet Potato) Wrap the sweet potato in a layer of aluminum foil, place it on a 9-inch round cake pan, and bake until a fork or knife easily pierces the flesh, about 1 hour and 20 minutes. Remove from the oven and remove the foil and peel the skin off, transfer the sweet potato into a bowl and mash it using a potato masher. Pour the mashed sweet potato into a blender or food processor then purée until smooth (it will make 1 cup cooked and mashed sweet potatoes). Set aside. For the Brown Sugar-Cinnamon Filling: In a skillet, add in the chopped pecans (or walnuts) and toast for about 10 minutes until they are crisp and warm through. In a small bowl, add in the brown sugar, cinnamon, and toasted pecans (or walnuts); stir until well incorporated. Set aside. Reduce the oven to 350 Degrees (for the Cake) Grease a 9x13 inch baking pan with baking spray or grease with butter and flour and set aside. For the Cake: In a stand mixer with paddle attachment or large bowl using an electric hand mixer, sift or whisk together the cake mix, flour. sugar, salt (if using), nutmeg, and cloves until well blended. Then add in the cake mix, melted butter, sour cream, buttermilk, eggs, vanilla extract, and sweet potatoes to the cake mix mixture and mix on medium speed until well combined (be careful not to over mix). Pour in half of the cake batter into the prepared pan and spread evenly then sprinkle on half of the brown sugar-cinnamon filling on top then pour in the rest of the cake batter on top and spread evenly then sprinkle on the rest of the brown sugar-cinnamon filling on top and spread evenly (you can just sprinkle all the brown sugar-cinnamon filling in the middle of the cake if you like). Bake for 40 to 45 minutes until golden brown or a toothpick in the center comes out clean. Remove the cake from the oven and place it on wire rack. Drizzle the glaze on top of the cake while it is still warm, cut into desired slices, serve and enjoy!!! For the Vanilla Honey Glaze: In a medium bowl, sift or whisk together the powdered sugar and salt (if using), then add in the melted butter, honey, vanilla extract, and evaporated milk; whisk or stir everything together until well combined and smooth.
