These jerk lentil tacos are PACKED with flavor and protein! Seasoned lentils with Caribbean jerk spices, loaded into warm tortillas with all your favorite toppings. This easy meatless taco recipe is budget-friendly, meal prep-ready, and totally satisfying — even meat lovers will ask for seconds! Ingredients: 1 1/2 Cup of green lentils 1 1/2 Tsp of cumin 2 Bay leaves Pinch of fennel seeds 1 Tsp of sweet Spanish smoke paprika 1 Tsp of oregano 1 Tsp of onion powder 1 Tsp of garlic powder 1/2 medium onion (diced) Olive oil 3 Tbsp of tomato paste 1 1/2 Tsp of Grace jerk seasoning One bag of Oroweat Keto tortillas (615g) Instructions: 1. Soak the green lentils for a 2-3 hours. In a large pot, add water or broth, lentils, bay leaves and cumin and boil for 6-8 minutes. 2. Dice a medium size onion or shallot. 3. Once lentil is cook, put aside 1 cup of the broth and strain the rest of the liquid. 4. Heat up a large pan with olive oil and saute the onions for a few minutes. Add in some tomato paste and continue cooking. 5. Add the lentils to the pot and coat it with onion and tomato paste. Add in an additional tbsp of tomato paste if you want a deeper red color. 6. Add oregano, cumin, smoke paprika, onion powder, garlic powder and jerk seasoning. Add about 3 tbsp of the water or broth to the pot. Enough to coat the lentils with all of the ingredients. 7. Cook lentils until the water or broth evaporates, then set the filling aside. 8. Grease a clean pan with olive oil and heat up on low heat. Grease both sides of the tortilla and then add it to the pan. Cook both sides for about 1 minute, making sure the tortilla does not burn. 9. Once the tortilla is toasted, add about 1 to 2 tbsp of the lentil filling, but don't over fill. 10. Close the tortilla and press it again the pan for 30 to 60 seconds at a time until its crispy.
