In a large bowl, whisk 2 cups flour, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. In another bowl, whisk 2 egg yolks, 1 3/4 cups milk, 1/2 cup melted butter, and 1 teaspoon vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. In a clean bowl, beat 2 egg whites until stiff peaks form. Gently fold the whipped egg whites into the batter to keep it light. Lightly grease the waffle iron and pour batter into the center. Cook waffles for 4–5 minutes until golden brown and crisp. Remove carefully and serve hot. Pro-tips: Separating and whipping egg whites makes waffles extra fluffy. Do not overmix batter or waffles will be dense. Serve immediately for maximum crispness. Add pearl sugar for authentic Belgian-style crunch. Keep cooked waffles warm in a low oven if needed.
