Bharva Baingan (Stuffed Brinjal) – Recipe Method Ingredients: Medium-sized brinjals (baingan) Ginger-garlic paste Kashmiri red chilli powder Red chilli powder Cumin seeds (jeera) Garam masala powder Salt (to taste) Coriander powder (dhaniya powder) Roasted peanut powder Fresh green coriander (finely chopped) Oil Onion (finely chopped) Tomato (finely chopped) Water (as required) Method: In a mixer jar, add ginger-garlic paste, Kashmiri red chilli powder, red chilli powder, cumin seeds, garam masala powder, salt, coriander powder, roasted peanut powder, green coriander, little oil, and a little water. Grind everything into a smooth stuffing paste. Wash the brinjals and make two cross cuts (four-side cuts) without separating them completely. Stuff the prepared paste evenly into each brinjal. Heat oil in a shallow pan. Add cumin seeds and let them crackle. Add chopped onions and sauté until golden. Add chopped tomatoes and the remaining stuffing paste. Cook until oil separates. Place the stuffed brinjals gently into the pan. Fry on medium flame, turning carefully so they cook evenly. Add extra peanut powder and a little Kashmiri red chilli powder. Cover with a lid and cook on low flame until the brinjals are soft and well cooked. Add a little water if required. Garnish with fresh green coriander. Serve hot with roti, chapati, or rice. 🌿🍆
