Hey Guy’s! Welcome back to my channel. It’s getting cold outside so it’s just the right time to make a big pot of Vegetable and Ham Soup. We had baked ham for Thanksgiving and I always save the bone to make soup. Monty always buys a bone in ham of his choice and immediately start mentioning that he wants vegetables soup made with the bone. It’s was my Grandmother and Mother’s tradition to do so just like every other Southern cook. I used leftover corn and mixed vegetables that I had in the fridge also. The soup came together and the sweet cornbread pulled the vegetables and rich stock together quite nicely too. Vegetable and Ham Soup: Leftover Ham Bone, remove all of the ham from the bone and set aside. Save ham drippings to pour in the soup broth. 6 Cans Diced Tomatoes, undrained 2 Cans Black Beans, washed and drained 2 Cans Mixed Vegetables, drained 1 Can Whole Kernel Corn, undrained 1 Large Package Baby Spinach, washed 3 Large Potatoes, peeled cubed and washed 2 Medium Onions, chopped Half Gallon Chicken Stock / Bouillon 2 Tablespoons Minced Garlic 1 Tablespoon Sea Salt 1 Teaspoon Black Pepper 1 Teaspoon Granulated Garlic 1 Teaspoon Granulated Onion 1st cut all of the ham off of the bone and set aside for later. Place the bone in a large boiling pot and add the chicken stock and the ham drippings. Add the spices and simmer for about 5 minutes. Add all the canned vegetables and let simmer 30 minutes. Next add ham, spinach and potatoes. Cook for another 20 minutes or until the soup has boiled down some. Once done let cool slightly and eat with cornbread. Enjoy 😊
