The key is using plain Greek yogurt (no vanilla, no flavoring) to keep the texture rich without overpowering the dish. This mac and cheese is baked, easy to put together, and perfect for a real dinner. I paired it with crispy catfish and collard greens to show how this mac and cheese works as more than just a side. Mac & Cheese Base 2 cups elbow macaroni (dry) 3/4 cup plain Greek yogurt 👉 Must be plain — no vanilla, no flavoring 1 cup cheddar jack cheese, shredded 1 cup mild cheddar cheese, shredded 1 tablespoon light or classic olive oil 1 can cream of chicken soup 1/2 teaspoon black pepper 1/2 teaspoon smoked paprika 🥖 Breadcrumb Topping Less than 1/4 cup breadcrumbs Pinch of black pepper Pinch of smoked paprika 1 teaspoon olive oil 🍲 How Much Water to Boil the Pasta In Use at least 6 cups of water Add 1–2 teaspoons salt (optional but recommended) 💡 You want plenty of water so the pasta doesn’t stick and cooks evenly. Cook the pasta for 6 minutes only (par-cooked, not fully done — it finishes in the oven) Drain and set aside. 👩🏽🍳 Instructions Preheat oven to 375°F. Boil elbow macaroni in salted water for 6 minutes, drain, and set aside. In a large bowl, add: Greek yogurt Cream of chicken soup Olive oil Black pepper Smoked paprika Stir until smooth. Fold in both cheeses. Add the cooked macaroni and mix until well coated. Transfer mixture to a lightly greased baking dish. In a small bowl, mix breadcrumb topping ingredients and sprinkle evenly over the top. Bake uncovered at 375°F for 25–30 minutes, until hot and lightly golden on top. 🍽️ Serving Tip This mac and cheese works great as a main side and pairs well with fish, chicken, or greens.
