Crispy mini malai boti samosas made two ways from one creamy chicken filling! In this recipe I divided the malai chicken filling into two flavors: •Cheesy Malai Chicken Samosas •Creamy Malai Tikka Chicken Samosas Perfect for iftar, tea-time snacks, or party appetizers. Ingredients and method are listed below 👇 Step 1: Marinate the Chicken Ingredients: • 370g mini chicken pieces • ½ cup thick yogurt (hung curd preferred) • 3-4 tbsp fresh cream • 1 tbsp ginger garlic paste • 1 tsp white pepper • 1 tsp black pepper • 1 tsp salt (adjust) • 1 tsp lemon juice • 1 tbsp oil • 1 tbsp crushed green chilli (optional) • 1 tbsp milk powder (secret creamy touch ✨) Mix everything well and marinate at least 1 hour (overnight = more flavour). ⸻ Step 2: Cook the Chicken • Heat a pan on medium. • Add the marinated chicken. • Cook covered 8–10 mins until tender. • Cook uncovered on high to dry excess moisture. Let it cool completely. If pieces are big, chop slightly smaller so filling fits mini samosas nicely. ⸻ Step 3: Make Mini Samosas • Use ready-made samosa strips (mini size). • Add 1 tsp filling. • Fold tightly into triangle. • Seal with flour + water slurry. Freeze Option (for your weekly meal prep idea) Arrange on tray, freeze until solid, then store in zip bag up to 1 month. ⸻ Frying Fry on medium-low heat until golden and crispy. (If oil too hot, wrapper will brown but inside won’t heat properly.) ⸻ Air Fryer Option Brush lightly with oil. Air fry at 180°C for 10–12 mins, flip halfway.
