Hi friends, I’m Chef Jeff, and today we’re diving into one of most legendary comfort foods — Mapo Tofu — this can be a vegan dish, or you can add ground meat to it if you want to. This is one of Sichuan’s national treasures, famous for its mala magic — that numbing sensation (ma) and spicy heat (la) and that makes your tongue say “ouch” and “wow” at the same time. This dish is so popular, when you are sitting in a Chinese restaurant not sure about other dishes, you are sure about this one, it is a default that can not go wrong. 🥢 The 4 Major Ingredients Soft Tofu (嫩豆腐) — 1 piece $1.20, gentle but firm enough to hold its shape. Not silken tofu — that can break apart easier and turn into tofu soup. Ground Pork or Beef —100 grams $0.80 - adds umami depth. A little fat = a lot of flavor.3. Sichuan Peppercorns (花椒) 1 tbsp — no substitute here. They’re what make it mala — that addictive numbing heat. Toasted, grinned, sieved. Other seasonings ($0.50): Doubanjiang (豆瓣酱) — 1 tbsp the soul of the sauce. Fermented broad bean & chili paste that turns oil into deep red gold. Garlic 2 cloves, minced; Chili powder ½ tsp Grinned sichuan peppercorn powder, Soy sauce 1tbsp Shaoxing cooking wine (or white or red wine), Sugar ½ tsp Vinegar ½ tsp Cornstarch slurry (1 tsp starch + 1 tbsp water). Sesame oil ½ tsp Green onions chopped 1 tsp The 4 Simple Steps Toast & Grind the Sichuan peppercorns Prep the Flavors: Mince garlic. Chop chili bean paste, Green onions, Cut tofu into cubes (2 cm/0.8 inch) Stir-Fry the Base: Fry the minced meat, add the chili bean paste, add garlic, chili powder, grinned sichuan peppercorn powder, soy sauce, Shaoxing wine, sugar, add 1 cup of water. boil Bring It Together: Add the tofu — don’t stir hard, just nudge it. Add: ground Sichuan peppercorn; & vinegar. Bring to a boil, then simmer. Thicken with a cornstarch slurry (1 tsp starch + 1 tbsp water). Drizzle of sesame oil and garnish with green onions. Serve.
