Today I'm going to show you how to make a classic Caesar dressing and then were going to make a grilled Caesar salad with it! This is one of my favorite ways to prepare a Caesar salad and I hope you guys give it a try! Grilled Caesar Salad with Crispy Panko Croutons Ingredients For the Caesar Dressing: 2 ea Egg yolks 1 clove Garlic, grated 3 ea Anchovy fillets, finely minced and mashed into a paste 1 tsp Dijon mustard ½ cup Olive oil 2 ½ tbsp Lemon juice 1 tbsp Water ½ cup Parmesan cheese, freshly grated ½ tsp Salt (adjust to taste) ½ tsp Black pepper For the Grilled Romaine: 2 ea Romaine hearts 1 tbsp Olive oil To Taste Salt & Pepper For the Crispy Panko Croutons: 2 tbsp Butter ½ cup Panko breadcrumbs 1 tsp Fresh parsley, minced Pinch of salt Pinch of black pepper Instructions Make the Caesar Dressing: In a mixing bowl, separate and add two egg yolks. Grate in one clove of garlic. Add the mashed anchovy paste and Dijon mustard to the bowl. Secure the bowl with a rolled-up wet kitchen towel to keep it steady. Slowly drizzle in the olive oil while whisking constantly to create an emulsion. Once thickened, add lemon juice and water to thin it out. Stir in grated Parmesan cheese, then season with salt and black pepper. Set aside. Grill the Romaine: Trim the root slightly but keep the romaine halves intact. Drizzle with olive oil and rub it in evenly. Season with salt and black pepper. Heat a grill pan over high heat until smoking. Place romaine halves cut-side down, pressing lightly for good contact. Grill for 30 seconds to a minute, then rotate 90 degrees for crosshatch marks. Once charred but still crisp, remove from heat. Make the Crispy Panko Croutons: Melt butter in a pan over medium heat. Add panko breadcrumbs and stir continuously until golden brown. Season with salt, black pepper, and minced parsley. Assemble the Salad: Spread a small amount of dressing onto the plate. Place grilled romaine halves on top. Drizzle with more Caesar dressing, spreading evenly. Sprinkle crispy panko croutons generously over the romaine. Finish with additional grated Parmesan.
