दिल्ली के मशहूर छोले कुल्चे कैसे बनाते हैं ।How to make chole and aata kulcha at home| Follow me - Youtube -@Purnimakitchen03 Instagram-@Purnima_skitchen Facebook -@purnima’s kitchen #youtubevideo #viral#recipe #kulcha #youtube #youtuber #videos #trending Matar and Aata Kulcha Recipe- Ingredients- •2 katori/Cup Matar/ yellow peas . 2 chopped onion •2-3 chopped tomatoes , ginger •3-4 chopped green chilli •tarmaind , coriander leaves, mint leaves, green chili, ginger For Masala—- •1 tsp black salt, 1 tsp Kashmiri lal mirch, 1tbsp chaat masala,1/2 tsp garam masala For Dry masala- •4-5 whole Red mirch, •1tsp whole black pepper •1tbsp jeera/cumin seeds •1 tsp ajwain/carom seeds For atta kulcha- • 2.5 Cup Atta • 2 tsp sugar • 2 tsp dry yeast • water • 2 tbsp milk powder • 2tsp salt • 1 tbsp sugar powder Method- For kulcha Atta- 1. Take some hot water in bowl add 2 tsp sugar. 2. when water warm add 2 tsp yeast and mix well and rest for 15-20 mins. 3. Take Parat add 2.5 Cup atta . 4. Add 2 tbsp milk powder and add 2 tsp salt and 1 tbsp sugar powder and mix well. 5. Pour Fermented water and mix well. 6. knead the soft atta and add 1 tsp butter and knead it and rest for 2 hour. For Dry masala- Take pan add whole lal mirch, whole black pepper, jeera and ajwain and roast it. After roast grind it . For make matar/chole— 1. Overnight soak 2 cup matar or yellow chole in water. 2. In the next morning wash overnight soaked matar then it pour into cooker add some water and add 1-2 tsp salt. 3. Cover the cooker with lid and put into gas and after 1 vessel low flame the gas and after 15-20 mins switch off the gas. 4. soak tamarind into hot water and rest for 10 mins. 5. Take Jar add 1/2 cup coriander leaves & 1/2 cup mint leaves add 2 green chili abd add 1 inch gingerand add water and grind it . 6. Add tamarind into green chatani and grind it. 7.Chopped 2 onion, chopped 2-3 tomatoes, ginger into sliced, chopped green chilies . 8. Check the matar when vessel cool down . 9. pour into bowl add chopped onion, chopped tomatoes, chopped green chilies. 10. Sieve chatni water into it. 11. add dry masala , add 2 tsp black salt, 1 tsp Kashmiri lal mirch, 2 tsp chaat masala, 1/2 tsp garam masala powder into it. 12. add ginger slices and lemon juice and mix well. Your matar is ready. For kulcha- 1. After 2 hour take atta pour some dry atta into it and knead the atta once again for 3-4 mins. 2. Make small dough and take 1 dough ball in surface and roll into it. 3. Hot the tawa add some butter then put kulcha into it and add some green coriander into it . 4. Gas on this stage is medium . 5. roast it from both side. Your atta kulcha is ready.
