Hello! Welcome to our cozy corner! In this second video of ours, we will show you another quick and simple recipe from "Recipes from the World of Tolkien" by Robert Tuesley Anderson (not sponsored). We hope you enjoy it! Ingredients: 3 cups blueberries 1/2 cup water Scant 2 cups gelling sugar with pectin, warmed (we experimented by making our own gelling sugar, using a pectin/super-fine sugar mixture) 1/3 cup honey Juice from 1 lemon 1 tablespoon butter (optional; we did this batch without, but may try using it in the future as an experiment) Process: Place washed blueberries into a stainless-steel jam pan (we didn't have one, so we just used a normal stainless-steel pot) and cook gently for 10 minutes until softened, crushing from time to time with a wooden spoon Add in the sugar, honey, and lemon juice and heat gently, stirring every now and then, until dissolved. Bring to a boil, then boil rapidly until setting point is reached (10-15 minutes) If there is scum forming on top of the jelly, skim it off with a spoon or stir in the optional butter to disperse the scum Ladle into warm, dry, sterilized jars, filling to the very top (as said in the book, which we obviously didn't do...whoops XD) Cover with screw-top lids, or with waxed discs and plastic wrap tops secured with elastic bands.
