Preheat oven350°F (175°C). Line a baking sheet with parchment paper. 2. Mix dry ingredientsWhisk together flour and baking powder (add salt if using). Set aside. 3. Cream butter & sugarsBeat butter, white sugar, and brown sugar until smooth and creamy. 4. Add peanut butterMix until fully blended. 5. Add egg & vanillaBeat until smooth. 6. CombineAdd the flour mixture and mix just until dough forms. 7. ShapeRoll into 2-inch balls and place on baking sheet or scoop it with ice cream scooper. 8. ChillPut the tray in the refrigerator for 10 minutes. 9. Fork mark patternPress fork once → turn fork → press again to make the criss-cross pattern. 10. Bake10–13 minutes, until edges are set and centers are soft. 11. CoolLet cookies rest on the pan for 5 minutes, then move to a rack. Easy Chipotle Carne Asada (Griddle) Ingredients (2 lb skirt or flank steak) Base marinade Juice of 1 small lemon or 1/2 large (≈ 2 tbsp / 1/8 cup) 1/2 cup orange juice 4 garlic cloves 2 tbsp soy sauce 2–4 tbsp olive oil 2 tsp cumin 1 tsp chili powder 1 tsp paprika 1/2 tsp black pepper 1 to 2 tsp salt taste marinate before adding raw meat 1/2–1 cup cilantro 2 medium onions 2 jalapeños Optional heat Up to 2 chipotle peppers in adobo, chopped 1 tsp adobo sauce Directions 1) Prep & Mix Small dice or pulse onions, jalapeños, garlic, and cilantro. Mix them with the remaining ingredients in a clean bowl to make the marinade, and taste it before adding the meat. 2) Marinate (Optional) Lightly score the steak in a diamond pattern about 2 inches apart.Add steak and coat well. Refrigerate 4–6 hours max. 3) Warm Up Remove steak from fridge 20 minutes before cooking. 4) Heat Griddle Heat to high 450–500°F (230–260°C) and lightly oil. 5) Cook Steak Lay down and don’t move it. Flip once. Medium-rare: 2–3 min per side → 130–135°F (54–57°C) Medium: about 3 to 4 min per side → 140–145°F (60–63°C) 6) Rest Rest steak 5–8 minutes 7) Slice & Serve Slice thin against the grain.
