If you're watching your calories, you can skip the cheese or use leek instead of onion for an extra freshness. With easy preparation and various adjustment options, this soup makes an excellent choice for a family meal. Ingredients: • 500 g broccoli • 2 small carrots • 1 stalk celery • 1 small onion • 3 small or 2 medium potatoes • 100-200 g cheese (cheddar or any cheese of your choice) • 30 g butter • 1/2 teaspoon ground paprika • 2 tablespoons flour • 800 ml water or broth (can also use a cube) • 200 ml milk or cream • Salt and pepper to taste Preparation: 1️⃣ Separate the stalk from the broccoli, peel it, and cut it into small cubes. Carefully break off the florets and cut the thicker stalks as well, adding them with the rest. 2️⃣ Cut the carrots, onion, and celery into small cubes and add them to the pot with the broccoli stalks. Peel and dice the potatoes, and place them in water to prevent them from browning. 3️⃣ Grate the cheese and set aside for later use. 4️⃣ In a bit of olive oil, sauté the vegetables (excluding the potatoes and broccoli florets) for about 5 minutes until they soften and slightly brown. Add salt to help release the water. 5️⃣ Add 30 g butter, and once it melts, add 2 tablespoons of flour. Cook for another 2 minutes to remove the raw taste of the flour. 6️⃣ Add ground paprika and pepper to taste. 7️⃣ Pour in 800 ml of water and add the diced potatoes. Once it boils, lower the heat and cook for 20 minutes until the potatoes are soft. 8️⃣ Once the vegetables have softened, add the broccoli florets, cover the pot, and cook for another 10 minutes on low heat. 9️⃣ After the broccoli is cooked, turn off the heat and blend the vegetables with an immersion blender. 🔟 Add 200 ml of milk or cream and, if desired, more water or broth until you reach your desired soup thickness. 🔟 Add the grated cheese and stir until fully melted.
