Welcome to my channel! Today, I'll show you how to make delicious Popcorn Samosas, a perfect crispy and delicious snack. This easy recipe is great for parties and quick bites. Let's get cooking and enjoy this mini goodness! Ingredients- For the dough- •1 cup All Purpose Flour (You can use 50% whole wheat flour too) •2 tbsp Oil •1/4 tsp salt •Ice Cold Water to knead a dough (3 to 4 tbsp) Potato Filling- •3 medium sized Potatoes, pressure cooked & mashed •1/2 cup Green Peas •2 tsp Oil •1/2 tsp crushed Coriander Seeds •½ tsp fennel seeds, crushed •1/2 tsp Whole Cumin Seeds, crushed •1/4 tsp Black Pepper •1/2 inch cube Ginger, grated •2 Green Chillies, crushed •1 clove Garlic, finely chopped •1/4 tsp Turmeric Powder •1/4 tsp Black Salt •1/2 tsp Garam Masala •2 to 3 tbsp Chopped coriander •2 tsp Amchoor Powder •Salt, to taste Others- Oil for frying Green chutney, to serve Sweet chutney, to serve Method- For the dough - •In a parat or mixing bowl, mix the all-purpose flour, salt and oil. Rub it well so that it gets mixed uniformly. The mixture will look like bread crumbs. This step is very crucial for getting the right texture of the samosa crust. •Add in water little by little and knead a stiff dough. The dough should be like the one for making puris. •Cover the dough and let it rest for 30-60 mins before using. •For the Samosa Filling- •Heat oil in pan, add the crushed coriander, fennel & cumin seeds. Cook it for a minute. Add the crushed green chilli, garlic and grated ginger. •Add the turmeric powder and cook for 30 seconds. •Add the green peas and mashed potatoes. •Season with salt and mix in coriander leaves. Combine it all well, cook for a few mins and finish with black salt, garam masala, black pepper, amchoor powder and some more coriander leaves. •Mix it all up and remove from flame. Cool this filling and use it only when it is at room temperature. To make the samosa- • Roll out the dough like a paratha and cut out small circles using a round cutter. Then, roll the circles further into oval shapes. •Divide them from centre and make samosas out of each. •For this, apply little water on the linear edge and seal to make a cone. • Add in the filling and then using a little water seal it. (When using water to seal the dough, smear it only on one side, this ensures it will stick well) •Repeat this step for all the pieces and then deep fry in hot oil, on a medium low flame. Make sure the oil is not very hot else the samosas won’t be crispy. You can shape the samosas and keep it aside in a plate covered using a damp muslin cloth prior. •Once golden brown, remove and drain these on a kitchen towel and serve along with the chutneys of your choice. •Enjoy!
