Welcome to my channel! Indulge in the ultimate fusion snack with Bhajiya Cheese Fondue! Crispy bhajiyas paired with a creamy cheese dip make for an irresistible treat. Ingredients- For the chutney cheese fondue- •15g Butter •15g Flour •150 ml Milk •½ cup grated processed cheese •¼ cup grated cheddar cheese •¼ cup grated mozzarella cheese •2-3 tbsp green chutney •Chopped jalapenos, for garnish •2 tsp ghati masala, for garnish •Coriander leaves, for garnish For the kanda bhajiya- •3-4 onions, sliced thinly •½ tsp red chilli powder •1 cup besan •1 tbsp chopped coriander leaves •½ chopped green chillies •¼ tsp turmeric powder •Salt to taste •Oil, for frying For the corn bhajiya- •2 cups sweet corn kernels + 4 tbsp •½ tsp turmeric powder •1 tsp ginger chilli, crushed •Salt to taste •1 tsp red chilli powder •¾ cup besan •2 tbsp rice flour •1 tbsp cornflour For other bhajiyas- •Thinly Sliced potatoes •½ cup chopped spinach •Paneer •1.5 cup besan •Salt, to taste •½ tsp turmeric powder Method- For the fondue- •Heat butter in a pan, add the flour and sauté for half a minute on a low flame. •Slowly, add in milk and keep stirring until well combined. Once the mixture thickens, add in the cheeses, and keep stirring constantly until the cheese melts. •Add the green chutney and combine well. •Remove and serve hot with bhajiyas. For the corn bhajiya- •To start with, grind 2 cups of sweet corn coarsely. Alongside, at oil in a kadhai to medium hot. •Transfer the kernels to a bowl and add in the whole kernels to it. Mix in the spices and then, add in besan, rice flour and cornflour. •Combine it all well, scoop out small portions of the mixture and drop it into the hot oil. Do not stir. Fry them over medium flame until golden brown and crispy. •Remove excess oil and serve hot with the fondue. For the kanda bhajiya- •Heat oil in a kadhai to medium hot. •Mix together onion slices, salt and red chilli powder in a bowl. •Then, add in chillies, coriander leaves and turmeric powder. Mix well and add in besan. •Combine it all well, scoop out small portions of the mixture and drop it into the hot oil. •Do not stir. Fry them over medium flame until golden brown and crispy. •Remove excess oil and serve hot with the fondue. For the other bhajiyas- •Prepare the besan batter. Take besan in a bowl and mix in salt and turmeric powder. Then, slowly add in water little by little and whisk the mixture into a smooth flowing consistency. •Set aside for 15-20 mins. •Heat oil in a kadhai to medium hot. Dip in and coat the slices of potato into the batter and drop it into the hot oil. Do not stir. •Fry them over medium flame until golden brown and crispy. •Remove excess oil and serve hot with the fondue. •For the spinach bhajiya, dip and coat the spinach leaves with the batter and drop them one by one into the hot oil. Do not stir. Fry them over medium flame until golden brown and crispy. •Remove excess oil and serve hot with the fondue. •For the paneer bhajiya, dip and coat the paneer cubes with the batter and drop them one by one into the hot oil. Do not stir. Fry them over medium flame until golden brown and crispy. •Remove excess oil and serve hot with the fondue. •Assemble and garnish the fondue with ghati masala, chopped jalapenos and coriander leaves. •Enjoy! Vishesh Tippani- •Cook the full thing on low flame & put it hot in the fondue put. •Fry the bhajiyas on a medium flame. If oil is too hot, the bhajiyas will get crisp from outside and remain raw inside.
