Hey Guys! This is a Simple & Delicious Lemon Meringue Pie recipe. I’ve always loved lemon meringue and was so amazed at how easy it is to make. This is Mary Berry’s very best recipe. Here’s what you’ll need! Ingredients 3 Eggs 1 Tbsp Brown sugar 100g Melted butter 1 pkt Tennis biscuits (digestives) 1 tin Condensed milk 1 & 1/2 Lemons (Squeezed) 175g Castor sugar An 8 or 10 inch tray How to make it! Preheat the oven to 180 degrees Celsius or 160 fan Base 1. Crush the biscuits. Then add the melted butter and brown sugar. 2. Combine it together. Put it into the tray and press it against the bottom & sides (until firm). Lemon curd 1. Separate the 3 eggs into yolks and egg whites. 2. Mix the condensed milk, squeezed lemon juice and 3 egg yolks together. 3. Pour the mixture onto the base. Then put it into the fridge to set for 30 minutes, while you make the meringue. Meringue 1. Pour the egg whites into a mixing bowl and mix on high speed until it’s very foamy. 2. Sloooooowly add the castor sugar until it’s stiff. It’s usually stiff not long after the castor sugar is added. 3. Add the meringue on top of the lemon curd. Make sure to completely cover it. Then use a spoon to make spikes. Place in the oven for 15-20 minutes (until a light brown). When it’s done allow it to cool. Then INDULGE!
