LOCTO – SHIVRATRI SPECIAL 🌿 CHEF AANAL KOTAK Prep Time: 15 Minutes Cooking Time: 20 Minutes Serves: 3–4 ⸻ 🌿 ORIGIN & WHY THIS RECIPE IS SPECIAL Locto Is A Rare Traditional Gujarati Shivratri Vrat Dish Made With Rajagra Flour And Chaas. This Unique Combination Creates A Creamy Yet Roasted Texture While Keeping The Dish Light, Sattvik And Filling. Passed Through Generations, It Is A Comforting Fasting Preparation That Stands Out For Its Simplicity And Distinct Flavor. ⸻ INGREDIENTS FOR LOCTO 2 Tbsp Oil 1 Tsp Cumin Seeds 10–12 Curry Leaves 2 Tbsp Green Chilli (Finely Chopped) 2 Medium Potatoes (Thinly Sliced Using Chips Slicer) 1 Tsp Red Chilli Powder ½ Tsp Turmeric Powder 1 Tsp Coriander Powder 1 Tsp Cumin Powder 1 Medium Bowl Rajagra Flour Sendha Namak As Per Taste 1 Cup Chaas (Buttermilk) 2 Tbsp Fresh Coriander (Finely Chopped) ⸻ METHOD 1. Heat Oil In A Pan. Add Cumin Seeds And Let Them Crackle. 2. Add Curry Leaves And Finely Chopped Green Chilli And Sauté Briefly. 3. Add Thinly Sliced Potatoes And Toss Gently. 4. Add Red Chilli Powder, Turmeric Powder, Coriander Powder And Cumin Powder And Mix Lightly. 5. Add Rajagra Flour And Sendha Namak And Toss Till Potatoes Are Evenly Coated. 6. Roast On Low Flame For 2–3 Minutes. 7. Gradually Add Chaas While Stirring Gently To Avoid Breaking Slices. 8. Cook Till Mixture Thickens And Potatoes Are Fully Cooked. 9. Garnish With Fresh Chopped Coriander And Serve Hot. ⸻ 🔥 CHEF TIPS 1. Slice Potatoes Very Thin For Proper Coating And Even Cooking. 2. Add Chaas Gradually And Stir Gently To Maintain Texture. 3.
