SQUASH FRITTER RECIPE 2 cups shredded or grated yellow summer squash do not peel (about a pound) 3/4 cup all-purpose flour 1/2 of a finely chopped onion 1/2 teaspoon salt !/2 tsp Italian seasoning 1/4 cup grated parmesan cheese 3/4 teaspoon garlic powder 1 egg Oil for frying about 2 TBS Butter for frying about 2 TBS Mix shredded squash and onion in a cotton towel and squeeze out as much moisture as possible. Once well drained, place squash and onion into a medium size bowl. Add all other ingredients except oil and butter. Mix really well, then let sit while you heat the oil and butter over medium heat until sizzling. Make fritters into patties and fry in hot oil for approximately three minutes on each side until golden brown.
