Wagashi are traditional Japanese confections that are usually paired with green tea, and encompass a range of sweets that are made with sweet bean paste, mochi, rice flour, sesame paste, and other classically Japanese ingredients. Here, wagashi artist Mai shows how she makes namagashi (“raw sweets”), which are served during the Japanese tea ceremony. This particular style of namagashi is called nerikiri, and is made with shiroan (white bean paste), and typically molded into shapes that represents the seasons. Mai makes a sakura (cherry blossom), chrysanthemum, and bellflower for us.
