Add the eggs one at a time, beating well after each addition to ensure a smooth batter. Stir in the vanilla extract. 3️⃣ Combine the Dry Ingredients In a separate bowl, whisk together all-purpose flour, pistachio flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir just until combined. Fold in the buttermilk and pistachio cream until the batter is smooth. 4️⃣ Create the Chocolate Batter Weigh out 350g of the batter into a separate bowl and mix in the cocoa powder until fully combined. (Optional: add a small amount of green coloring to the pistachio batter for a more vibrant loaf.) 5️⃣ Assemble the Loaf Pour alternating layers of pistachio and chocolate batter into a greased or parchment-lined 9×5-inch loaf pan. Use a knife or skewer to gently swirl the batters together — avoid over-swirling. Sprinkle chopped pistachios and sugar on top. 6️⃣ Bake Bake at 350°F (175°C) for 10 minutes, then reduce the temperature to 320°F (160°C) and continue baking for 40–50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely tent with foil. 7️⃣ Cool Let the loaf cool in the pan for 10–15 minutes, then transfer to a rack to cool completely before slicing.
