The korma is prepared with tomatoes, yogurt, green chilies, and Bombay biryani masala, then layered with fragrant basmati rice and given proper dum — exactly like authentic Karachi street food biryani. 🧾 Ingredients For Chicken Korma: Oil – 2 cups Onions – 1 kg (thinly sliced) Whole chicken – 2 (cut into pieces) Ginger-garlic paste – 6 tsp Tomatoes – 1 kg (blended) Green chilies – 12 (paste) Whole & Ground Spices: Coriander powder – 2 tsp Bay leaves – 2 Star anise – 2 Mace (javitri) – 1 tsp Cinnamon stick – 1 Black cardamom – 1 Black pepper – ½ tsp Cloves – 6–8 Cumin seeds – 1 tsp Tamarind pulp – 1 tsp Yogurt Masala: Yogurt – ½ kg Yellow food color – ¼ tsp Salt – 1 tsp Bombay biryani masala (Mehran) – 1 pack Lemon juice – from 3 lemons Potato Marination: Potatoes – peeled & halved Chili flakes – 1 tsp Salt – ½ tsp Ginger powder – ½ tsp Biryani masala – 2 tsp Yogurt – 3 tsp 👨🍳 Method (Karachi Chicken Biryani Banane Ka Tarika) Chicken Korma: Heat oil in a deghchi and fry onions until golden brown. Add chicken and cook until lightly golden. Add ginger-garlic paste and sauté for 5 minutes. Add tomato paste and green chili paste, cook for 7 minutes. Add all spices and mix well. Add yogurt masala and marinated potatoes. Add another pack of Bombay biryani masala, sauté and cook. 👉 Korma ready in 25 minutes. Rice: Boil water with salt and whole spices. Add soaked basmati rice and cook until 80% done. Drain and set aside. Layering & Dum: Layer rice and chicken korma in a pot. Add fried onions, mint, coriander, nuts & food color between layers. Place pot on a hot tawa and give dum for 15 minutes on low flame. Rest for 5 minutes before serving. 🍽️ Serving Suggestion Serve hot with raita and salad.
