Here's another recipe you can make with your leftover lechon - Sinigang na Lechon. This dish is cooked the same way as the Pork Sinigang ( • Pork Sinigang Recipe ) but instead of using pork belly, the lechon is used which is also delicious. I start with heating the lechon in the pot so that the flavor sticks. The rest of the ingredients are combined and simmered in the savory sour taste of sinigang. You will love this recipe. Ingredients: 700g leftover lechon 1 pack Sinigang sa Sampalok Mix (44g) 1 large red onion, sliced 2 medium tomatoes, sliced 1 bundle kangkong (water spinach), leaves only 1 bundle okra (lady's finger) 2 medium talong (eggplants) 1 bundle sitaw (string beans) 1/2 tsp salt 1/4 tsp ground black pepper 3 green chilies 2 liters of water Procedure: 1. In a large pot, heat lechon chunks for about three minutes. 2. Add onions and mix. 3. Pour water. Add salt and ground black pepper. Stir. Cover and let it boil. 4. Add tomatoes and sinigang powder. Mix and let it simmer. 5. Add the vegetables - okra, sitaw, talong. Mix and simmer. 6. Check and taste. If ok, add the kangkong leaves. Mix then turn off the heat. 7. Serve with steamed rice. Enjoy!
