Created by InShot:https://inshotapp.page.link/YTShare 1 TBS vegetable oil 5 lbs of duck ( cut into small pieces) 1 green onion 1/2 medium onion ( save 1/4 for the curry) 2 pimento pepper ( optional) 4 chilly pepper ( optional) 3 clove of garlic few sprigs of thyme 1 TBS green seasoning 1 tsp salt 1 tsp black pepper 2 1/2 TBS curry powder 2 1/2 TBS chief curry duck/goat curry powder 1 TBS Amchar massala Wash the duck with vinegar and lemon or lime juice and trim off the excess fat and skin. Then rinse 3 times and drain excess water. Then season the meat with onion, pimento, chilly pepper, garlic, thyme, green seasoning,salt and black pepper and let marinade for an hour or two. Add the vegetable oil and let get hot then add the onion and cook for a bit ( about 1 min ) then add both curry powder and let fry up a bit then add some water ( about 1/4 cup or less) and let cook for a few minutes ( stir in between) till it have a paste like texture now add the duck and stir and add the Amchar massala and stir again and cover and let it cook for about 10 to 15 minutes covered ( stir occasionally. Then add just enough water to cover the meat and pressure for 15 minutes. When it finished release the pressure and taste for salt and tenderness and if you are happy with it put it back on to saute and let the liquid dry down to your liking. Enjoy
