如何製作蝦殼高湯 How to make Shrimp shell stock 姊夫の食堂 廚房工具箱 姊夫今天要為大家示範高湯之王 龍蝦高湯 姊夫大略聊一下龍蝦高湯 所謂的龍蝦高湯,其實是利用甲殼類海鮮不可食用的殼,例如龍蝦殼,螃蟹殼,明蝦草蝦殼,經過烤箱烤過或者是用油炒過,再加上香料蔬菜和高湯(雞高湯,魚高湯等等)一起熬製的高湯,所以說,不見得ㄧ定要用龍蝦,才能熬製龍蝦高湯! 這類的高湯,有著甲殼類海鮮的特殊香味,普遍使用於各國的料理之中。 最知名的料理有:法式龍蝦湯,西班牙海鮮飯,義大利海鮮燉飯/海鮮義大利麵,還有福建蝦麵,甚至台南擔仔麵的湯頭,也有使用蝦殼熬製喔! 蝦高湯熬得好不好,也是美味的關鍵 姊夫喜歡用一般的蝦殼來熬蝦高湯,原因除了一般蝦殼取得最方便之外,根據姊夫的經驗,一般蝦殼比較薄也比較小,在炒的時候,操作比較容易,香味也比較容易釋放放。 龍蝦殼與螃蟹殼就不一樣了,首先!龍蝦殼不是隨時都有,龍蝦頭與螃蟹殼在製作之前還要先敲碎,在炒的時候也要比較費心照顧,除非剛好手邊有龍蝦殼與螃蟹殼,姊夫在熬龍蝦高湯的時候,不會刻意的去找龍蝦殼或是螃蟹殼! 另外一點很重要,不管是龍蝦肉,明蝦草蝦肉還是蟹肉,對於熬龍蝦湯的香味完全沒有幫助,肉!還是留給自己和最親愛的家人朋友享用吧! 熬湯!還是殼最好用了! 接下來!姊夫會分享,利用龍蝦高湯和蝦油在料理的運用! 要持續追蹤姊夫的頻道喔! 製作基礎龍蝦高湯,我們要準備的材料有: 乾淨的蝦殼大約600 公克 豬骨頭大約600公克(要挑選有帶筋的部位,高湯熬起來才會有膠質! 高湯五公升(姊夫用自己熬的雞高湯) 烹調用油(姊夫這次用之前熬的黃金雞油) 蒜頭大約50公克(大致上切一下就好) Hello everyone!
