It’s been a whirlwind 36 hours for chef Brian Limoges of Enclos restaurant in Sonoma. On Wednesday, the fledgling fine-dining spot earned two Michelin stars in its first year of eligibility, leapfrogging the typical one-star entry and landing directly in the two-star category – a rare feat in the Michelin world. By Thursday afternoon, however, it was back to business for Limoges and the staff at Enclos – preparing for dinner service and fielding a flood of reservation requests.
