Try this easy yet scrumptious sourdough pizza recipe. This recipe makes enough dough for 4 or 5 10 inch pizzas or 2 large pizzas. Leftover dough can be frozen (as it is) or topped and frozen to be cooked as a frozen pizza. Top with your favourite toppings and enjoy! I have added milk to this recipe for a softer crumb. If you want a more Neopolitan style pizza, simply replace the milk with further water. This recipe is around 65% hydration which is a good sweet spot for pizza dough. If you can't get tipo 00 flour, use strong white bread flour. Tipo 00 flour does help to provide great elasticity if you are able to find it though! Recipe: Combine 325ml water, 50ml milk and 2 Tbsp olive oil. Add 100g of active sourdough starter and stir. Add 600g tipo 00 flour and 2tsp salt (10g) and mix to form a dough. Rest for 30 mins. Then perform a series of stretch and folds at 30 minute intervals (I repeated this 3 times but be guided by your dough), until your dough is smoother and more elastic. Cover with clingfilm and rest until doubled (4-6 hours). Roughly shape the dough into a ball and place into a clean bowl greased with olive oil. Place in the fridge until you are ready to bake. Preheat your oven to 230c with a cast iron frying pan in it (or pizza steel / stone if you have one). Allow your dough to come to room temperature. Divide your dough into pieces (around 200-250g each for a 10 inch pizza) and shape into balls followed by a pizza shape. Place your shaped pizza dough onto baking paper and rest for 10 mins. Add your toppings and then place into your preheated pan. Bake for 15-20 mins. You can finish under the grill for the final few minutes if you'd like a browner finish. #recipe #pizza #sourdoughpizza #sourdough #homestead
