Prep time 5 minutes Cook time 10 minutes Serves 2 Ingredients 120g orecchiette pasta 3 tbsp olive oil 6 good quality anchovies 1 small red chilli, seeds removed and finely chopped 2 courgettes, thinly sliced into rounds 200g cherry tomatoes, halved 4 sun dried tomatoes, roughly chopped 1 tbsp capers 10 black olives, halved 15g parmesan, finely grated Juice of ½ lemon 20g parsley, roughly chopped 1 400g tin butterbeans, drained and rinsed Method Bring a medium pot of salted water to the boil and cook the pasta for 8-10 minutes, until al dente. While the pasta is cooking, place a large non-stick frying pan or casserole pan (one with a lid) over a medium heat. Add the olive oil and anchovies and mash the anchovies into the oil. Add the chilli, courgettes, cherry tomatoes, sundried tomatoes, capers and olives. Cover with a lid and sautee for 7 minutes, until the courgettes and tomatoes have softened. Add the parmesan, lemon juice and butterbeans. Stir to combine and cook for 2 minutes more. Drain the pasta and add to the pan along with the parsley.
