Traditional Qatlama Bread of North Khorasan | Iranian Local Pastry with Turmeric In this video, we explore the traditional bread of North Khorasan, Iran, known locally as Qatlama (قطلمه). Originally, this bread is made with saffron for its golden color and animal fat for richness. But in this version, to keep the bread affordable for everyone, turmeric replaces saffron and vegetable oil replaces animal fat. The process begins with preparing the dough: White flour, salt, yeast, and turmeric dissolved in water are added into a kneading machine. The baker works completely alone with no help. After kneading, the dough rests for 1 full hour until it rises perfectly. Then, the dough is divided into small balls (chuneh), flattened, and split with fingers to form strips. Each strip is twisted around the hand, shaping into beautiful rose-like rolls. Vegetable oil is used during every step so that the layers absorb it fully. Next, the twisted dough pieces are placed on an oiled tray, sprinkled with sugar, and prepared for baking. They are baked in a local bakery oven, turning several times until perfectly golden and crisp. The moment they come out of the oven, Reza tosses the hot breads onto the cooling table. Since the breads are extremely hot, customers must be careful not to touch them immediately.
