My Ultimate Ginger-Soy Fish

This dish is so delicious your family will ask for it once a week. And it's so deliciously easy to make you'll be more than happy to oblige. Here's how to make it: 4 tbsp light soy sauce 2 tbsp mirin 1 tbsp toasted sesame oil 1 tbsp fresh ginger, finely sliced into matchsticks 2 cloves garlic, finely sliced 1 medium shallot, finely sliced 2 fillets steelhead trout, deboned, skin-on (can substitute with a firm white fish such as cod or halibut, or an oily fish such as sea bass) 1. Make the sauce by combining the soy sauce, mirin, sesame oil, ginger, garlic and shallot. 2. Add a little veg oil to a nonstick pan on medium heat. Season the fish with salt and pepper and lay them into the pan, skin-side down. Let fry for about 3 minutes, depending on thickness, then gently flip and fry the other side. After another 3 minutes, or once the fish is about 3/4 cooked, pull them out and drain the oil from the pan. Return the fish, skin-side down, and pour the sauce around the fillets. Turn the heat down to low and let simmer for 1 minute. Add a quarter cup of water and spoon the sauce over the fish. Cover with a lid and let cook a final 2 to 3 minutes, before serving with freshly steamed rice. Cheers! Robert
