Use your simmer plate as a giant panini machine! Claire Thomson and family do it all the time! Here's their recipe for a Ham and Cheese Grilled Sandwich, but you could use whichever fillings you liked: Makes one toasted sandwich: 2 slices of day-old bread, lightly buttered on one side 1 slice of ham Around 40g cheddar cheese, or similar 1 tsp Dijon mustard Method: 1. Assemble the sandwich, buttered sides facing outwards. 2. Use a sheet of ‘bacoglide’ on the simmer plate and on top of the sandwich and use the oven lid as a giant panini machine. (The simmer plate is the right hand side plate of your solid top - there is often a limit to the temperature which Bacoglide and comparable products can reach, please triple check any instructions). 3. Grill the sandwich until lightly golden, carefully turning over midway through the cook time, this should take around 3 to 5 minutes, until the bread is lightly golden on both sides and the cheese is melted and oozing. 4.
