An Everhot cooker is perfect for slow cooking your Christmas turkey overnight. Taking out some of the stress and worry from Christmas Day. Always remove your turkey from the fridge well in advance of cooking it, so that it can reach room temperature before you put it in the oven. We recommend popping it into your top oven (210-220 degrees) for half an hour first to brown the skin. And then transferring it into the bottom oven (around 90 degrees) for the overnight cook. An 8 kilo turkey, like we are using, will take between 10 and 12 hours, a smaller 6 kilo one will only need 8-10 hours and a slightly bigger 10 kilo bird will need 12-14 hours. The next morning, remove the foil and baking parchment, and pop the turkey back into the top oven for 30 minutes to get wonderful crispy, brown skin. Make sure you give it lots of resting time afterwards, before carving and serving.
