I made a cocktail based on our favorite comedian, war criminal, shachou, bunny girl, Usada Pekora! Her birthday was on January 12th. Happy birthday Pekora! This one is for you! Here is the recipe: Carrot Infused Shochu: Get a carrot (as sweet and juicy as you can get) and using a y peeler cut long thin strips of the carrot, preferably more towards the center. Stuff the carrot strips into a small jar and cover with shochu. Let sit for a week, shaking the contents daily. Rabbit Ear Garnish: Take a jumbo carrot and cut long thin chips about 1/4 inches thick and 4 inches long. Coat chips in oil and cover in a mixture of brown sugar, cinnamon, nutmeg, and a little salt. Bake in prewarmed oven at 450 degrees Fahrenheit, flipping every 5 minutes, or until golden brown and crispy. Cocktail: 1/2 oz (15 ml) Pekola Syrup 1/2 oz (15 ml) Fresh Lime Juice 1 oz (30 ml) Pekora Umeshu 1 oz (30 ml) Carrot Infused Imo Shochu (42% abv) 2 Drops of Saline Solution To substitute for the Pekola Syrup and Pekora Umesu, use a sweeter style umeshu and either use a rich demarara syrup or top the cocktail with cola/root beer Shake over ice for 5 - 10 seconds. Fill a highball glass with ice and strain the cocktail into the glass. Top off with soda water and give it a stir with a straw to combine.
