Today I’m sharing one of my favorite comfort dishes — a deeply flavorful Chicken Bhuna Masala that’s cooked slowly until the spices turn rich, thick, and beautifully glossy. This recipe is all about building layers of flavor with caramelized onions, aromatic spices, and juicy chicken that absorbs every bit of the masala. It’s simple, satisfying, and perfect for a cozy meal at home. Serve it with roti, naan, or steamed rice for a restaurant-style experience right in your kitchen. If you love bold Indian flavors and easy high-protein meals, you’re going to love this one. ✨ Ingredients: • 600 g chicken breast, sliced into small pieces • 1 tbsp oil • 1 tsp whole jeera (cumin seeds) • 1 medium onion, chopped • 2 hot green chillies, minced • 1 tbsp ginger paste • 1 tbsp garlic paste • 2 tbsp tomato paste • 2 medium tomatoes, chopped • 1 tsp turmeric powder • 1 tbsp cumin powder • 1 tsp chilli powder (or to taste) • Salt to taste • Splash of water for bhuna texture • Lemon juice • Garam masala powder • Fresh cilantro 👩🍳 Instructions: 1️⃣ Heat oil in a pan and add cumin seeds. 2️⃣ Add onion, green chillies, ginger, and garlic — sauté until fragrant. 3️⃣ Stir in tomato paste and chopped tomatoes. 4️⃣ Add turmeric, cumin powder, chilli powder, and salt — cook the masala for about 10 minutes until thick and rich. 5️⃣ Add chicken slices and cook uncovered for 8 minutes so the flavors absorb. 6️⃣ Add a splash of water, cover, and cook another 8 minutes until tender. 7️⃣ Finish with lemon juice, garam masala, and fresh cilantro.
